Recipe: Chocolate Fudge Cake
Sunday was my (Fi) little man's 9th birthday. He is was a little too excited about his birthday cake Miss Georgia was decorating for him. It was a Glow-in-the-dark cake. The cake was a chocolate fudge cake (recipe below), filled with Oreo buttercream, covered in dark chocolate ganache and a brand new fondant we will be stocking soon. Watch this space!
This quantity will make an 8 inch round baked in a 3 inch deep tin, or if like me you prefer taller cakes (4-5 inch tall), you can bake same quantity split equally between 2 x 7 inch tins.
You will need:
450g Caster sugar
225g dark chocolate (at least 50% cocoa solids)
2 teaspoons instant coffee granules
2 tablespoons vegetable oil
110g plain yoghurt
125g plain flour
125g self raising flour
50g cocoa powder
1/2 teaspoon bicarbonate of soda
In a saucepan melt together butter, chocolate, caster sugar, water and coffee granules on a low heat. Allow to cool
Meanwhile preheat oven to 160 degrees C conventional or 140degrees C for a fan assisted oven
Grease and line your baking pan
Sift together dry ingredients and set aside
Add yoghurt, oil and eggs to melted chocolate mixture, then pour into dry indredients
mix well and por into prepared baking pan
Bake for about 1hour 40 minutes (8 inch round, deep cake) or until skewer inserted comes out clean, or for approx 50 minutes for the 7 inch cakes
*This can be smothered in buttercream or you can pop in the microwave and top with some double cream. Ultra comfort food!
